1 gallon med.-lg. cucumbers 1 c. lime powder (hardware store type) 1/2 c. vinegar 1/2 oz. red coloring 1/2 tsp. alum 1 c. vinegar 5 c. sugar 1 c. red hot candy 1 c. water 4 stick s cinnamon 1/2 oz. red food color To prepare cucumbers, peel and slice in 1/3-inch rings (seeds removed) or remove seeds and slice in 3x1/2-inch sticks. Dissolve lime in 1 gallon water; soak cucumbers 24 hours. Drain and wash in clear water; drain. In large pan put cucumbers, 1/2 cup vinegar, 1/2 ounce red color, alum, and enough water to cover. Simmer 2 hours; drain. In another pan boil 1 cup vinegar with remaining ingredients. Pour over cucumbers and set overnight. Every day for 3 days drain off liquid and bring it to a boil and pour back on cucumbers. On the 4th day heat everything to a boil. Put in jars and seal. Makes 6 pints. |
