GAZPACHO | |
1 minced clove garlic 1 2/3 c. (14 1/2 oz. can) canned tomatoes 2 c. or 1 med. peeled and chopped cucumber 1/2 c. minced green pepper 1/2 c. minced onion 2 c. tomato juice 2 tbsp. olive oil 3 tbsp. vinegar 1/2 tsp. salt 1/8 tsp. pepper 1/8 tsp. Tabasco sauce Place garlic, tomatoes, cucumber, green pepper and onion in blender. Cover and blend until mixture is almost smooth. Pour into pitcher and add remaining ingredients. Stir well to blend. Chill. Serve in individual mugs with ice cube in each one. Serve with separate bowls of chopped peeled tomatoes, chopped green peppers, chopped cucumber and crisp croutons. Makes 5 cups. |
