IMPERIAL CHICKEN | |
10 to 12 pieces chicken 2 c. fresh bread crumbs 3/4 c. Parmesan cheese 1/4 c. fresh chopped parsley 2 tsp. salt 1/8 tsp. pepper 1 clove garlic, minced 1 to 2 sticks melted butter This is easy. Can make crumb mixture in advance and refrigerate for a few days or freeze. Tastes like fried chicken but better! Mix all ingredients together EXCEPT for the melted butter. Dip each chicken piece in butter, then roll in crumb mixture. Coat very well. Do not overlap pieces. Place on large oven tray. Spoon 1 teaspoon butter over each piece. Bake 1 hour at 350 degrees. Do not turn. Good hot or room temperature for picnics. |
