IMPOSSIBLE ZUCCHINI TOMATO PIE 
2 c. zucchini, chopped
1 c. tomato, chopped
1/2 c. onion, chopped
1/3 c. grated Parmesan cheese
1 1/2 c. milk
3/4 c. Bisquick
3 eggs
1/2 tsp. salt
1/4 tsp. pepper

Heat oven to 400 degrees. Grease 10-inch dish or pie plate. Sprinkle zucchini, tomatoes, onion and cheese in pan. Beat remaining ingredients until smooth. Pour over other ingredients. Bake until knife inserted in center comes out clean, about 30 minutes. Cool 5 minutes. Yield: 6 servings.
