MUSHROOM, RED PEPPER AND
ARTICHOKE SALAD
 
1 (6 oz.) jar marinated artichoke hearts
1/4 lb. fresh mushrooms, sliced
1 red bell pepper, cored, seeded, and cut into thin strips

In medium bowl, stir together artichoke with marinade, mushrooms, and pepper strips until well coated. Cover and refrigerate for 30 minutes or until ready to serve. Toss before serving. Serves 4.
