MINESTRONE HAMBURGER SOUP 
1 lb. ground beef
1 c. chopped onion
1 c. cubed raw potato
1 c. sliced raw carrot
1/2 c. celery, diced
1/2 c. shredded cabbage
1 (#2) can tomatoes (2 1/2 c.)
1/4 c. rice
1 sm. bay leaf
1/2 tsp. dried thyme
1/4 tsp. dried basil
Salt
1/2 tsp. pepper
1 1/2 qt. water
Grated or shredded cheddar cheese

Cook beef with onion until brown. Add potato, carrot, celery, cabbage and tomatoes. Bring to a boil. Sprinkle in rice and add bay leaf, thyme, basil, salt and pepper and water. Cover, simmer for 1 hour. To serve, sprinkle with cheese. Makes 5 servings.
