1 gal. sm. cucumbers Salt 1/2 c. cloves (whole) 1 level tsp. cayenne pepper 3 qts. vinegar 1 1/2 c. sugar 1/2 c. stick cinnamon Soak 1 gallon cucumbers overnight in medium salt water. Three quarts not too strong vinegar, put in this 1 1/2 cups sugar, 1/2 cup cloves, 1/2 cup stick cinnamon and 1 level teaspoon cayenne pepper. Bring almost to boil, put in cucumbers, until hot. Place them in jars. Bring vinegar to boil, cover cucumbers and seal. "I also add to vinegar some dried orange peel which I keep ready in a tight tin box. I keep orange peel in my warming oven on a paper until dry and use it for many things." |
