SHANNON AIRPORT IRISH SODA BREAD | |
5 c. whole wheat flour 2 1/2 c. all-purpose flour 1/3 c. sugar 2 tsp. baking soda 1 tsp. salt 1 c. butter 2 eggs, well beaten 2 1/4 c. sour milk or buttermilk Mix together the two flours, sugar, baking soda and salt. Work in butter by hand. Mix eggs and sour milk or buttermilk. Make well in center of dry ingredients and add egg mixture, blending until a stiff dough is formed. Turn dough out on a floured board and knead well. Divide dough in half and shape into 2 round balls. Flatten tops and, with pointed knife, cut an X about 1/2 inch deep into them. Put loaves on oiled baking sheet and bake in preheated 400 degree oven 45 to 50 minutes, until brown and baked through. Cool bread before slicing. Best eaten fresh with butter or honey. Makes 2 loaves. |
