IRISH SODA BREAD | |
4 c. sifted flour 1/4 c. granulated sugar 1 tsp. salt 1 tsp. baking powder 1/4 c. butter 2 c. seedless raisins 1 egg 1 tsp. baking soda 1 1/3 c. buttermilk Mix and sift flour, sugar, salt and baking powder. Cut in butter with a pastry blender or two knives until it resembles coarse cornmeal. Stir in raisins. Combine buttermilk, egg and baking soda. Stir buttermilk mixture until just moistened. Bake in a greased 1 quart casserole in moderate oven (375 degrees) for 45 to 50 minutes until golden brown. FROSTING: 1/3 c. powdered sugar 1 or 2 tsp. milk 1/4 tsp. vanilla Stir and drizzle over cooled bread. |
