IRISH SODA BREAD 
4 c. white unbleached flour
3/4 c. sugar
4 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. cream of tartar
2 c. raisins
2 egg yolks
1/2 stick lightly salted butter, softened
2 c. milk

Generously dust the bottom of a 10-inch iron skillet with flour. Set oven at 300 degrees. In a large bowl mix all dry ingredients and raisins. Add egg yolks; work butter in. Add milk a big splash at a time; mix with your hands (do wash them first!).

Batter will be sticky and gooey. Add more milk if too dry. Spread around in iron skillet. Pat, leaving little indents of fingers (a bit of Irish love). Bake at 300 degrees until knife comes out clean, a bit over an hour.
