HAPPY DAY MUFFINS 
1 egg
1/2 c. milk
1/4 c. salad oil
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. vanilla
3/4 c. cranberry halves
1/2 tsp. salt

Preheat oven to 400 degrees. Grease or line muffin cups. Beat egg with milk and oil. Mix in remaining ingredients until flour is moistened. Batter will be lumpy.

Fill muffin cups 2/3 full. Bake 20 to 25. Serve warm.
