SHRIMP CREOLE 
1/2 c. onion
2 tbsp. butter
1/2 c. chopped green pepper
1/4 c. diced celery
1 bay leaf, crushed
1 tsp. parsley
1 tsp. salt
1/8 tsp. cayenne red pepper
1 can (6 oz.) tomato paste
2 c. water
1 (15 oz.) can small peas
2 c. cleaned steamed shrimp

Cook and stir onion in butter until tender. Stir in remaining ingredients except shrimp. Cook over low heat, stirring occasionally, about 30 minutes. Stir in shrimp, heat through. Serve over rice.
