1 pkg. yeast 1/4 c. warm water 1 3/4 c. warm milk 2 eggs 1/2 c. sugar 2/3 c. shortening 1 tsp. salt 5 1/2 c. flour Dissolve yeast in warm water. Add dissolved yeast and sugar to warm milk. Beat eggs and add to the yeast mixture. Add 3 1/2 cups flour and beat until smooth. Add melted shortening, salt and 2 cups flour. Beat at least 5 minutes. Let rise 1 1/4 hours. Beat down, cover and refrigerate at least 2 hours. Shape the dough into balls about the size of golf balls, let rise until light. Flatten the balls by putting a spoonful of filling in the center of each roll. Let rise again until light. Bake at 450 degrees for 8 minutes. If you're in a hurry, use frozen bread dough. Let it rise then follow the recipe from the time of shaping into balls. Pie Fillings - such as cherry or apple or prune: Cook 1 pound prunes until done. Pit and mash. Add 1/2 cup sugar and 1/2 teaspoon cinnamon. (1 cup applesauce added to this makes a mild filling.) Crumb Topping: Thoroughly mix 1/2 cup flour and 1/2 cup sugar. Add 1/2 tablespoon butter and 1 teaspoon vanilla. Work into crumbs. |
