“OVEN FRIED CHICKEN” IS IN:
NEXT RECIPE:  OVEN RUMP ROAST

OVEN FRIED CHICKEN 
8 boneless skinless thighs
2 tbsp. paprika
2 cups all-purpose flour
2 tsp. salt
1/4 tsp. garlic powder
1/4 cup (1/2 stick) butter

Combine all ingredients except chicken and butter. Put butter in 9x13-inch oven baking dish and melt.

Coat chicken with dry mixture and place in pan with melted butter.

Cook at 425°F for 20 minutes. Remove from oven and turn chicken over.

Cook for an additional 20 minutes at 425°F.

Excellent!!I tried the recipe above by switching a couple ingredients. Instead of using garlic powder abd paprika, I used chicken seasoning and crushed red peppers. It came out pretty tasty. I also used drumsticks instead of boneless thighs.

Dish was great. Although I had so much of the flour mixture left over it seemed very wasteful. next time I will cut this in half as the flour mixture had been contaminated with the chicken. My husband loved it and he is not a chicken fan in general.

Plan this for tonight the 2nd time. I used bone-in thighs before and they were great, Juicy but the coating was tasty, As simple as this is to prepare, it makes for a super weekday supper.

I did this recipe with bone-in split breasts. It came out perfectly! I added some seasoned salt, a little onion powder, and black pepper to the flour. Instead of 1/4 cup marg. I used about 1/2 cup. I also dipped the chicken in 2 eggs and about 1/2 cup of milk mixture first before flouring. The chicken was tender and juicy, and the breading was crispy! I WILL be making this again!!!! So much easier than traditional frying.

This is a great recipe. I reduced the amount of flour to 1 cup, since I only prepared 4 breasts. I added a little kick by using french fried onions which I put in a plastic bag and crushed with a rolling pin before adding garlic powder, salt pepper and paprika along with the flour.

While this recipe is fantastic, I usually don't need to use quite as much flour. 2 cups seems like a lot of waste. And the ratio of flour to seasoning seems awfully high. I usually use a lot less flour and more seasonings in a plastic bag, and then shake the chicken in it to coat..
