OVEN-BAKED FRIED CHICKEN 
1 (3 to 5 lb.) whole chicken, cut up
4 eggs
2 cups breadcrumbs
cooking oil

SUGGESTED SEASONINGS:

tarragon
rosemary
basil
dill weed
salt and pepper
onion powder
garlic powder

Preheat oven to 375°F.

In a small bowl, combine eggs and the spices, to taste. Beat together. In a separate bowl pour the breadcrumbs.

Dip the chicken into the egg mixture, turn until coated. Place in the breadcrumbs and turn until coated. Place in baking dish with a small amount of oil on the bottom of the pan. Repeat process with all of the chicken pieces. When all of the pieces are in the pan, combine the egg and the breadcrumbs that are remaining. Mix together. Taking a pastry brush, brush the tops of each piece of chicken until the mixture is gone, making it as even as possible.

Bake in preheated oven at 375°F for 30 minutes. Flip and bake for 10 more minutes.
