ITALIAN SPINACH 
1 lb. fresh spinach
2 tbsp. olive oil
1 clove garlic, peeled and minced
Ground black pepper
1 or 2 minced anchovies, optional or salt to taste

Wash spinach well and remove stems. Shake off as much water as possible. Heat olive oil in large skillet, making sure skillet is coated with oil. Add garlic, then spinach. Cover and cook over high heat until steam appears. Remove cover, reduce heat and simmer approximately 5 minutes. Season with pepper. Stir in anchovies, if desired, or add salt if you omit anchovies. Serves 3-4.
