LEMON MERINGUE PIE 
1 1/2 c. sugar
1 1/2 c. boiling water
4 egg yolks
5 or 6 tbsp. cornstarch
1/2 c. lemon juice
Rind of 2 lemons
2 tsp. butter

MERINGUE:

4 egg whites
1/4 tsp. baking powder
2 tbsp. sugar
1 tsp. vanilla flavoring

Mix cornstarch and sugar. Add boiling water; stir constantly. Cook 2 minutes. Add butter, egg yolks, rind, and juice. Let cool, then put in baked pie crust. Set aside. Beat egg whites until foamy. Add baking powder and vanilla flavoring. Beat again until thick foam. Add sugar. Beat again until peaks. Put on top of pie. Bake at 350 degrees for 5 minutes.
