HIGHLANDER PANCAKES 
1 1/2 c. milk
1 c. oatmeal (uncooked)
1 c. flour (sifted)
2 beaten eggs
1 tbsp. baking powder
1 tsp. salt
1 tbsp. honey
1/4 c. oil

Pour milk over oats and let stand 5 minutes. Combine flour, baking powder and salt. Lightly stir eggs into oats mixture. Add honey, then dry ingredients and oil. Stir until combined. Bake on hot, lightly greased griddle. Try serving with fresh fruit and yogurt or your favorite topping.
