BAKED OMELET 
8 slices bacon
4 green onions, sliced
8 eggs
1 c. milk
1/2 tsp. salt
2 1/2 c. Monterey Jack cheese, shredded (or cheese of your choice)

Preheat oven to 350 degrees. Fry bacon until crisp. Drain and chop. Reserve small amount of fat and saute onions until limp.

Beat eggs with milk and salt; stir in bacon, onions and 2 cups of cheese. Pour into greased shallow 2 quart baking dish. Bake for 35- 40 minutes or until set and lightly browned. Sprinkle with remaining cheese. Return to oven until cheese melts and serve immediately.
