CHEESE BASIL PASTA 
1/2 c. olive oil
3 cloves garlic, smashed
Basil to taste (about 1 to 2 tbsp.)
Salt to taste
Pepper to taste
12 plum or 4 lg. tomatoes, wedges or smaller
2 sweet red-yellow or green peppers
1 lb. Mozzarella cheese
1 lb. box rotini noodles

Add garlic, basil, salt, and pepper with olive oil in salad sized bowl. Chop tomatoes and peppers to desired size and add to oil mixture. Mix and let stand 30 to 60 minutes. Chop Mozzarella cheese into cubes 1/2 to 3/4 inch and add to vegetable mixture. Cook pasta to desired consistency; cool and add to mixture. Toss.
