FETTUCCINE WITH TOMATOES AND
BASIL
 
2 (14 1/2 oz.) cans peeled and diced tomatoes, drained well
2 tsp. minced garlic
2 tbsp. olive oil
1/4 tsp. salt
Freshly ground black pepper
6 oz. fettuccine noodles
1/4 c. chopped basil

In saucepan, combine tomatoes, garlic and olive oil. Simmer 5 to 7 minutes until slightly thickened. Season with salt and pepper to taste. Cook pasta according to package directions. Drain.

In warm bowl, toss pasta with sauce and basil. Serves 4.

NOTE: Twelve fresh plum tomatoes can be substituted. Peel, seed, and chop tomatoes before using.
