FINNISH BEEF AND VEGETABLE SOUP 
1 lb. lean boneless beef stew
3 c. beef stock
1/2 c. pared, diced rutabaga (yellow turnip)
2 carrots, pared in chunks
1 parsnip, pared in chunks
1 lg. rib celery, in 2-inch slices
1 leek (or 1 sm. bunch of scallions), trimmed, cut up
Salt & pepper to taste
2 potatoes, pared, cubed
2 tbsp. parsley, minced

Cut steak into 2-inch cubes, trim and discard any fat. Combine beef with water and heat to boiling. Skim foam. Add all ingredients except potatoes and parsley. Cover and simmer until meat is very tender, about 2 hours (40 minutes in pressure cooker, used according to manufacturer's directions). Add potatoes and simmer until tender, about 20 minutes (6 minutes in pressure cooker). Add parsley and heat through. Makes 6 meal-size servings.

To be a truly Finnish beef and vegetable soup known as Mojakka it needs to have whole allspice in the soup as well as a beef bone. My mom was from Finland and that is the way it is made.
