MERRICK INN'S BUTTERSCOTCH PIE 
1 (9") baked pie shell
1 c. brown sugar
1/3 c. flour
2 tbsp. white sugar
1/4 tsp. salt
2 c. half and half
3 egg yolks
1 tsp. vanilla

Combine brown sugar, flour, white sugar and salt. Scald half and half. Add to sugar mixture. Stir until blended.

Pour a little of the warm half and half mixture into egg yolks. Mix. Add egg yolks to remainder of half and half mixture. Return to heat. Cook until mixture is thickened. Let cool, then add vanilla.

MERINGUE: Whip 3 egg whites with a pinch of salt, 1/4 teaspoon cream of tartar. Whip until stiff but not dry. Beat in 1/4 cup sugar, 1 tablespoon at a time. Beat in 1 teaspoon vanilla until stiff peaks form.

Spread meringue over pie and bake in a 350 degree oven for 10 to 12 minutes.
