TOMATO CONSOMME 
4 c. canned chicken broth
4 c. tomato juice
1 c. finely chopped shallots or scallions
2 tsp. tomato paste
1/2 tsp. dried thyme
1/2 tsp. dried basil
1/2 tsp. allspice
2 tsp. fresh lemon juice
2 tbsp. dry cocktail sherry or Madeira
2 tbsp. finely chopped chives or parsley

Put all ingredients except lemon juice, wine, and chives or parsley into a saucepan. Simmer gently for 15 minutes. Strain and remove shallots or scallions. Reheat, adding the reserved ingredients. Serve with freshly made toast triangles, crust removed.
