MARCIA ADAMS' TOMATO PUDDING
(MODIFIED)
 
1 qt. crustless 1 inch bread cubes
3 1/2 tbsp. butter, melted
2 c. tomato puree (not sauce)
1/2 c. water
1/2 c. brown sugar
1 bay leaf
1 tbsp. orange juice
1 tbsp. lemon juice
1/2 tsp. salt
1/8 tsp. black pepper

Preheat oven to 375 degrees. Put bread cubes into an oiled 1 quart flat glass baking dish. Drizzle melted butter over them. In saucepan combine remaining ingredients, cover, simmer for 5 minutes. Remove bay leaf and pour over the bread crumbs. Do not stir. Set glass dish in a pan of hot water and bake in oven for 1 hour. Serve immediately as vegetable side dish.
