CHICKEN PICCATA | |
4 chicken halves 1 egg 3 tbsp. lemon juice 1/4 c. flour, unsifted 1/8 tsp. garlic powder 1/8 tsp. paprika 1/4 c. butter 2 MBT. chicken broth 1/2 c. boiling water Beat egg with 1 tbsp. lemon juice. Mix flour with spices. Dip chicken in egg, then flour. Brown chicken in butter. Dissolve MBT in water. Add lemon juice to fry pan and broth. Cover and simmer 20 minutes. Serve with rice. |
