LEMON ZUCCHINI COOKIES 
2 cups flour
3/4 cup butter
1 cup shredded zucchini
1 egg, beaten
1 teaspoon grated lemon rind or juice
1 teaspoon baking powder
3/4 cup sugar

Sift together flour and baking powder. Cream sugar and butter until fluffy. Add egg, zucchini and lemon rind to creamed mixture. Stir in flour mixture. Drop by teaspoonfuls on greased cookie sheet.

Bake in a 350°F oven for 10 to 12 minutes. Sometimes we add nuts or chocolate chips on top too!
