ZUCCHINI COOKIES 
2 eggs
1 1/2 c. sugar
3/4 c. vegetable oil
1 1/2 tsp. vanilla extract
3 c. all purpose flour
3 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/2 c. finely chopped nuts
1 1/2 c. grated zucchini or apples
1/2 tsp. baking soda

Beat eggs lightly. Beat in sugar, then oil and vanilla. Mix flour, baking powder, baking soda, salt, cinnamon and nutmeg. Gradually beat flour mixture into egg mixture. Fold in nuts and zucchini or apples. Cover and chill for at least an hour.

Preheat oven to 350 degrees. Drop by teaspoonfuls 1 1/2" apart on ungreased cookie sheets. Bake 12 to 14 minutes, until nicely browned around edges and glazed on top.

If zucchini is out of season, substitute grated apple for the zucchini.
