MISTY'S POTATO CANDY 
1 small potato (about the size of a golf ball)
1 (1 lb.) box confectioners' sugar
1 jar smooth peanut butter (at room temperature)
food coloring (optional)
1 extra person (to help with stirring!)

Boil the potato, skin on, until cooked all the way through. Peel the potato and mash it up in a large bowl with a fork.

Begin adding the confectioners' sugar a little bit at a time -- the mixture will first be very liquid, then it will start to stiffen up. Add food coloring if you desire -- we like to do a red roll and a green roll for Christmas.

Keep adding the confectioners' sugar to the potato until the entire box is in there -- be warned! -- your arm will get very tired and you will need someone to take over stirring this mixture, as it gets very stiff!

Roll out the dough onto waxed paper that has been dusted with confectioners' sugar. Spread dough generously with peanut butter, and roll up like a jelly roll. Put in refrigerator to stiffen further; about 30 minutes.

Slice candy into very thin slices -- it is VERY rich!

Excellent. Would give this 20* if possible. Have used this recipe for years. Have family members that request this candy... as their "only" gift. Never thought of coloring however. Hope you continue to submit more recipes.
