MARY'S CHICKEN 
Chicken - breasts, thighs and legs skinned
Vegetable oil
Salt
Pepper
1 med. onion (chopped)
1 c. water

Put chopped onion in a roaster that has a shallow rack. Add a 1/4 cup of oil and 1 cup of water. (The chicken should not sit in the liquid.)

Salt the chicken lightly; pepper the chicken heavily. Fry the chicken until lightly browned. Then transfer to roaster arranging the breast down first, then the thighs and legs. Cover tightly with lid. Bake at 350 degrees for 1 1/2 -2 hours.
