MASHED RUTABAGAS WITH GREEN PEAS 
2 lb. rutabaga OR
20 oz. pkg. frozen rutabaga
Mashed potato mix, 2 to 3 servings
Salt and pepper to taste
10 oz. pkg. frozen green peas, cooked and drained

Cut and peel rutabaga, chop into one inch cubes. Add to one inch of boiling water. Cover tightly and bring to a boil again. Cook 15 to 20 minutes until tender, then drain.

Prepare mashed potatoes according to package (but using only water, no milk or butter). Combine the prepared potatoes, and rutabaga with salt and pepper and mash together.

Spoon the mixture into a serving bowl, or an ungreased one quart casserole for heating and serving later, even the next day. Make a well in the center of the mashed rutabaga and fill with cooked peas.

Serves 6-8.
