CARROT CAKE 
2 c. sugar
4 eggs (beaten)
1 tsp. baking soda
1 tsp. vanilla
1 sm. can pineapple (drained) or 1 c. chopped nuts or 1 c. coconut
1 1/2 c. oil
3 c. self-rising flour
1 tsp. cinnamon
3 c. grated carrots

Combine dry ingredients. Add salad oil, eggs and carrots. Add other ingredients. Bake in 4 layers. Grease and flour pans. Bake 350 degrees 40-45 minutes. Cool and frost with cream cheese frosting.

CREAM CHEESE FROSTING:

1 (8 oz.) cream cheese
1 box powdered sugar
1 tsp. vanilla
1 stick butter
1 c. chopped nuts

Cream together butter and cream cheese. Add sugar and vanilla. Add nuts.
