CARROT CAKE 
2 c. sugar
1 1/2 c. oil
4 eggs
1 tsp. vanilla
3 c. grated carrots
2 c. self-rising flour
1 1/2 tsp. baking soda
2 tsp. cinnamon

In large bowl, mix eggs, sugar, oil and vanilla until well blended. Sift flour, soda and cinnamon together and add to egg mixture gradually. Fold in carrots. Bake in 3 well-greased and floured 9 inch pans for 30minutes at 350 degrees. After layers have completely cooled, frost with the following.

FROSTING:

1 stick butter, softened
8 oz. cream cheese, softened
1 box. powdered sugar
1 tsp. vanilla
1 c. chopped nuts

Mix the above thoroughly. If too thick, you may add a couple drops of milk for spreading consistency. (This was always my choice for my birthday, Easter and Christmas.)
