CAROLINA TEA BREAD 
3 c. flour
3 c. sugar
1 tbsp. baking powder
1 tbsp. cinnamon
3 eggs
1 1/2 c. milk
1 1/2 tsp. salt
1 1/2 sticks butter

Mix well all ingredients, except butter. Melt butter, cool and add to other ingredients. Grease pans with butter and dust with flour. Pour mixture into pans and bake at 375°F for 45 minutes (or until center is done, test with straw). Cool 10 minutes, turn out on brown paper. Loaves freeze well.

Makes 2 large loaves or 5 small loaves.

SPICE BUTTER:

1 stick butter
Grated rind of 1 orange
1/4 tsp. cinnamon
Pinch of mace
1/4 tsp. vanilla

Beat butter with rind, spices and vanilla. Serve with tea bread.

Bread may be sliced and toasted for breakfast or tea.

I LOVE this bread and the spice butter is so yummy, but it's the most cantankerous bread recipe I have! Sometimes the loaves come out beautiful. Other times, they overflow in the oven then "crater" in the middle when I remove them. I'd love to know if anyone has found a secret to making this recipe more reliable/consistent!
