MEXICAN CHICKEN CASSEROLE 
1 chicken
1 lg. bag of Doritos (corn chips)
1 can cream of chicken soup
1 soup can of chicken broth
1 sm. can chili peppers (chopped)
1 med. onion, chopped
2 tbsp. chili powder
1 tbsp. pimentos (or 1 sm. jar)

Boil and debone chicken. Place with crumbled Doritos in 9 x 12 inch baking dish. Combine other ingredients. Pour over chicken and Doritos. Bake 30 minutes at 350 degrees. Remove from oven and sprinkle top with 2 cups grated cheese. Cheese will melt.
