HOT CAJUN CHICKEN 
6 chicken breasts, cooked, boned, then chopped
1 can cream of chicken soup
1 can mushroom soup
1 can tomatoes (or 1 can tomatoes and 1 sm. can green chilies, sliced)
1/2 c. chicken broth
1 sm. onion, diced
2 tbsp. chopped green pepper
1 1/2 c. grated cheddar cheese
1 bag taco chips or Doritos

Mix all together except cheese and chips. Make layers of chicken mixture, cheese and chips and top with chips and cheese. Bake until bubbly in 350 degree oven in a casserole dish. May be topped with sour cream. Serves 6-8.
