CAJUN CHICKEN AND PEAS | |
2 tsp. olive oil 1 c. chopped green bell pepper 1/2 c. chopped scallions 2 garlic cloves, minced 10 oz. boneless skinless chicken, cut into strips 1 1/2 c. sliced mushrooms 1 c. canned crushed tomatoes 8 oz. frozen or drained canned peas 1/2 tsp. dried thyme 1/8 tsp. red pepper In a large skillet heat oil. Add pepper, scallions, tomato, garlic, chicken, mushrooms. Let cook on low until done then put peas in at end. 4 servings, 207 calories each. |
