CAJUN CHICKEN WINGS 
12 to 18 chicken wings
5 bay leaves, crumbled
3/4 tsp. caraway seeds
1/2 to 3/4 tsp. red pepper
3/4 tsp. ground coriander
3/4 tsp. ground cumin
2 cloves garlic, chopped finely
1 1/2 tsp. dry mustard
2 tsp. paprika
3/4 tsp. dried thyme
1/2 tsp. salt
2 tbsp. brandy
2 tbsp. lemon juice

Microwave or boil wings for 10 minutes. Drain and cool. Meanwhile, grind together all dry ingredients, using a large mortar and pestle, to uniform mixture. Add brandy and lemon juice. With pastry brush, cover both sides of wings with this paste. Wings may be cooked in 375 degree oven or on grill until deep brown and crisp, 20 to 25 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
