GOOD AND GOOD FOR YOU SPINACH
SALAD
 
1 pkg. spinach leaves
1 can mandarin orange slices, drained
1 pkg. sliced fresh mushrooms
1 1/4 c. sugar
2 tsp. dry mustard
2 tsp. salt or salt free seasoning
2/3 c. vinegar
3 tbsp. onion, finely minced
2 c. canola oil
3 tbsp. poppy seeds

Divide spinach, orange slices and mushrooms among 4 plates. Combine remaining ingredients in a cruet and shake well. Serve over salad. You can also add cooked bacon pieces.
