GRIDDLE COOKIES | |
2 1/2 c. sifted flour 1 c. sugar 1 tsp. salt 1/2 tsp. baking soda 1 1/2 tsp. baking powder 1 tsp. nutmeg 1 c. shortening 1 c. rolled oats, quick or reg. 1 egg 1/2 c. milk 1/2 c. raisins Sift together flour, sugar, salt, soda, baking powder and nutmeg together into bowl. Cut in shortening until mixture resembles coarse crumbs. Stir in oats. Add egg, milk and raisins. Mix well. Turn half dough out on lightly floured board canvas; knead a few minutes. Roll dough to form a 12 inch square; cut into 2 or 3 inch squares. Heat griddle (or electric skillet) to 325 degrees grease lightly. Place squares on griddle. Bake until tops of cookies become puffy and the undersides brown about 3 minutes. Then turn and brown other side. Repeat with other half of dough. Serve hot from the griddle or cool and store in a covered container. 4 to 5 dozen. |
