LUMPY DICK OR THICKENED MILK 
2 c. milk, scalded with 1 tbsp. butter
1/4 tsp. salt
Few grains of pepper

Beat 1 egg and combine with 1/2 cup flour and 1/8 teaspoon salt.

Break up into 1 teaspoon size and drop into hot milk. Cover and allow to cook on low heat for 7-10 minutes. Serve in soup dish with milk or cream poured over it. Some people like it served with sugar and cinnamon. Main supper with fruit or vegetable salad.

DANISH PUDDING:

Boil 1 quart milk in skillet and sprinkle white flour a little at a time slowly, not stirring, but gradually poking and mixing so it doesn't get slick and smooth, but slightly lumpy. Keep at high heat (but don't boil hard) for about 15 minutes. Should be fairly thick like cereal. Serve warm with thick cream. Used as a pudding, add butter, sugar, and cinnamon or nutmeg. Used as morning breakfast, it was served with butter and salt. (These recipes got families through some very lean years.)
