COWBOY BEANS 
2 lb. pinto beans
2 lb. cooked ham
1 onion, chopped
1 green chili pepper, chopped
2 tbsp. sugar
1 c. tomato paste

Soak beans overnight. Place in 12-quart saucepan and cover with water. Add remaining ingredients and simmer until tender. Sample beans while cooking and add water as needed.
