INDIAN SPINACH SALAD | |
1/4 c. white wine vinegar 1/4 c. salad oil 2 tbsp. chutney 2 tbsp. sugar 1/2 tsp. salt 1 1/2 tsp. curry powder 1 tsp. dry mustard 8 c. (10 oz.) fresh spinach, torn into pieces, possibly 2 heads 1 1/2 c. chopped unpeeled apples 1/2 c. peanuts 2 tbsp. sliced green onion In container combine vinegar, oil, chutney, sugar, salt, curry and mustard. Shake and chill. Place torn spinach in large salad bowl; top with apple, peanuts and green onion. Shake dressing and pour over salad and toss. Serves 8. |
