SWEET LIME CHILI CHICKEN 
1 (4 oz.) can diced green chilies
1/2 c. chopped green onions
1/3 c. fresh lime juice
1/3 c. plum sauce
1 tsp. ground coriander
Salt and freshly ground pepper
8 boneless chicken breast halves
Freshly cooked rice

Combine first 5 ingredients in small bowl. Season with salt and pepper. Place chicken in glass baking dish. Pour marinate over. Cover and refrigerate at least 2 hours or overnight.

Preheat oven to 450 degrees. Bake chicken until golden brown, basting often, 35-40 minutes. Serve immediately with rice.
