LIME BROILED FISH AMANDINE 
1 lb. frozen fish fillets
1/4 c. butter, melted
1/4 tsp. finely shredded lime peel
1/4 c. lime juice
Few drops bottled hot pepper sauce
1/4 c. toasted sliced almonds
1 tbsp. snipped parsley

Allow fish to stand unwrapped at room temperature 20 minutes. Cut fish crosswise into 4 equal portions. Place fish on ungreased rack of broiler pan. Combine melted butter, lime peel, lime juice and pepper sauce; brush some of the mixture over fish. Sprinkle lightly with salt and pepper.

Broil 4 inches from heat for 12 minutes. Brush with lime mixture; turn and brush again. Broil 10-12 minutes more or until fish flakes easily when tested with a fork. Remove fish pieces to serving platter. Combine remaining lime butter with sliced almonds and snipped parsley; spoon some over each portion of fish. Makes 4 servings.
