CALIFORNIA BLT 
1/2 head iceberg lettuce, torn
5 oz. fresh spinach, torn
3 hard boiled eggs, sliced
8 oz. bacon, crisp cooked drained and crumbled
6 oz. mushrooms, sliced
2 green onions, cut into 1/4 inch pieces
1 1/2 c. croutons

Place lettuce in bottom of large salad bowl. Next, layer in order: eggs, bacon, onions, spinach, tomatoes, croutons, and mushrooms. Garnish with additional bacon slices, if desired. Toss before serving and top with favorite salad dressing.
