PINEAPPLE COCONUT CAKE 
1 lg. can crushed pineapple, drained
1 box Duncan Hines yellow cake mix
1 egg

Mix cake mix with 3/4 cup pineapple juice from can of pineapple and egg. Beat until mixed. Bake 13 x 9 inch pan at 350 degrees for 15 minutes. Cool. Pour remaining juice over cake.

Mix 1 large box instant vanilla pudding, 2 cups milk and 8 ounces creamed cheese. Pour over cake and spread even. Sprinkle crushed pineapple over cheese mixture. Spread 9 ounce Cool Whip over pineapple. Sprinkle coconut over Cool Whip. Chill before serving. Can freeze.
