TORTELLINI SALAD 
2 lbs. tortellini, cooked and cooled
1/3 c. red wine vinegar
1 1/2 tsp. Dijon mustard
1 c. virgin olive oil
1 tsp. minced parsley
2 tsp. dried basil
1 tsp. dill
12 oz. diced ham
1-2 sm. red peppers, cut into sm. pieces
1/2 c. minced scallions
1/3 c. toasted pine nuts
1/3 c. grated Parmesan cheese

Combine vinegar, mustard, salt and pepper. Add olive oil. Beat until well combined. Add spices and remaining ingredients; mix and then chill.

Can be made ahead.
