TORTELLINI SALAD 
DRESSING:

1/2 c. finely chopped parsley
2 cloves garlic, minced
1/4 c. olive oil
2 tbsp. grated parmesan cheese
1 tbsp. red wine vinegar

Whisk dressing ingredients together shortly before serving.

SALAD:

1 lb. cheese filled tortellini
1/4 c. olive oil
1/2 lb. prosciutto, sliced 1/4 inch and cubed
1/2 lb. smoked turkey, sliced 1/4 inch and cubed
1/2 lb. provolone cheese, cubed
1 c. peas
2 carrots, grated
1/2 lg. red bell pepper, thinly sliced

Cook tortellini according to package directions, about 8 to 10 minutes. Place in a large bowl and toss with olive oil. Add prosciutto, turkey, provolone cheese, peas, carrots, and bell pepper and toss. Cover and refrigerate for 30 minutes. Pour dressing over salad and toss.

Preparation Time: 45 minutes Cooking time: 8 to 10 minutes for tortellini. Serves : 6

Note: May substitute ham for prosciutto. A hearty, colorful main dish salad.
