MINESTRONE WITH TORTELLINI 
1 1/2 lbs. bulk Italian sausage
1 c. chopped onion
6 c. beef broth
1/2 c. dry red wine
1 (16 oz.) can tomatoes with liquid
2 c. thinly sliced carrots
1 c. thinly sliced celery
1 c. tomato ketchup
1 tsp. Italian seasoning
2 garlic cloves, minced
2 c. sliced zucchini
1/2 lb. frozen meat - or cheese-filled tortellini
1 med. green pepper, diced
1/4 c. chopped fresh parsley
Salt and freshly ground pepper
Grated Parmesan cheese to taste

In 5 quart dutch oven, brown sausage. Drain off excess fat. Add onions. Saute until tender. Add beef broth, wine, tomatoes, carrots, celery, ketchup, Italian seasoning and garlic. Bring to a boil. Simmer 30 minutes. Skim away fat. Stir in zucchini, tortellini, green pepper and parsley. Simmer, covered, for 30 to 4 minutes, or until tortellini is tender. Season to taste with salt and pepper. Sprinkle with cheese before serving. Serves 8.
